Provide official docker images

Problem

No matter which way you slice it, self-hosting will require some level of expertise. Considering that documentation is still in-progress, self hosting is nearly impossible without extensive trial and error.

Proposed solution

Provide official docker images so that users can more easily self-host. Quick-start documentation would be easier, as an example docker-compose file can be provided, covering the vast majority of self-host deployments.
