Self-hosting docs: Cloudflared Compose override is missing network config

What needs fixing?

The cloudflared.compose.yml snippet in the self-hosting guide does not specify a network, so Docker puts Cloudflared on fluxer_default instead of fluxer_fluxer where caddy runs. Since Cloudflared can't reach caddy, all requests through the tunnel return 502 error.

The fix should to add this network block to the yaml file: 
networks:
  fluxer:
    external: true
    name: fluxer_fluxer
