emoji picker defaults not always rendering as twemoji

Observed behaviour

seemingly random emotes do not render as twemoji (the ones that don't work seem to be consistent across ios/android)

Reproduction steps

Build information

Version 1.0.0, Beta 36, Channel Beta, Build 40, iOS 18.7.8 (arm64), Device iPhone17,1, Locale en-US, Push apns, Flutter 3.44.6, Dart 3.12.2

Platform

iOS

Expected behaviour all the emotes should be rendered as twemoji

Can reproduce CR: Version 1.0.0, Beta 36, Channel Beta, Build 2173, Android 16 (arm64), Device Infinix Hot 50i, Locale en-US, Push unifiedpush, Flutter 3.44.6, Dart 3.12.2 (and additional device with slightly different result I'll say on #channel)

Can reproduce CR: most emojis such as

etc. do not render as flat-styled twemoji - Version 1.0.0, Beta 36, Channel Beta, Build 40, iOS 26.5 (arm64), Device iPhone15,4, Locale en-US, Push apns, Flutter 3.44.6, Dart 3.12.2
